Quick Sweet Pickles from Honey & Jam

by kate on August 15, 2012

After our team retreat last month, we were all feeling eager for fall (and even winter!—we’re strange I know), but after a trip to the farmers’ market this past weekend, I’ve changed my mind. I have fond memories of the summer harvest in my father’s garden, and the thick smells that would waft through the house. He would turn the kitchen into a miniature canning factory: there were bowls of crushed tomatoes, bubbling pots of sauce, glass jars boiling on the stove, and dozens of pristinely handwritten labels laid out in an orderly grid on the table.

We’re a pickle-loving family, so I’m surprised my father never tried home pickling in all those summers past. This year I’m feeling inspired to try it in my own home,  and I’m excited to start my pickle experiments with this recipe for Quick Sweet Pickles from Hannah at Honey & Jam. Using cucumbers plucked straight from her garden and adding cinnamon, sugar, and red onions for a sweet and tangy flavor, Hannah quickly whipped up a couple of batches of these sweet pickles for a summer snack. You can see more of Hannah’s recipes here, and if you’re looking for something even sweeter, I recommend trying Hannah’s recipe for Cider Caramel Apple Pie—it’s perhaps the best apple pie you’ll ever taste.
