Sharks in Marfa

A Food Shark, that is. In our fourth issue, Jennifer Duardo and Jen Siska explore the tiny town of Marfa, Texas. Over the past few decades, Marfa has become a haven for artists, musicians, and travelers looking to find great food, culture, and comfort in the desert. On their second day, Jennifer and Jen stop in at one of the most popular restaurants in town and home to the one and only Marfalafel: Food Shark, a mobile joint fashioned out of an old 1974 Ford truck by owners Krista Steinhauer and Adam Bork.

Food Shark’s Mediterranean-meets-Texan street food has tempted diners from around the country to visit and received rave reviews from publications including Food & Wine magazine, The Boston Globe, Bon Appetit, and The New York Times. The restaurant has even expanded to include a 1989 Blue Bird school bus that Krista and Adam converted into a 30-seater dining car with booths, chairs, and tables (see below).

When a town has a landscape as beautiful as this—and a restaurant that serves up inexpensive, mouthwatering cuisine from a fleet of redesigned vintage vehicles—it seems impossible to miss out.

Marfa is incredible. What an artsy, fun…and financially difficult place to be.
